While demand is on the rise, much of the consumer appetite for organic food, roughly 70 to 75 per cent, is satisfied by imports. A major focus at Agriculture and Agri-Food Canada’s Research Centre at Harrow is developing food-grade soybeans for products like tofu. Ontario farmers grow these varieties for important export markets such as Japan. In recent years, the researchers have also been working on the domestic market. Soybean breeder Vaino Poysa tells Foodland Forum more about the breeding program, and how the priority shifted about 20 years ago toward the food-grade market. |
